Add This Fully Loaded Mexican Dense Bean Salad to Your Weekly Summer Meal Prep

Dense bean salads are one of my favorite meal prep staples because they're simple, nutrient-dense, and stay fresh in the refrigerator for several days. Unlike leafy salads that wilt quickly, dense bean salads actually taste better as the flavors marinate, making them perfect for busy weeks.


One of my favorite things about this recipe is the variety of flavors and textures in every bite. The creamy avocado and cotija cheese balance the bright acidity of fresh lime juice, while the sweetness of corn and bell pepper complements the earthiness of the beans. Fresh cilantro, garlic, and jalapeño add layers of flavor that make the salad feel exciting rather than repetitive, even when enjoyed multiple days in a row.


An Easy Fiber-Rich Side Dish


Beans are packed with fiber, a nutrient that most people don't get enough of. Fiber supports healthy cholesterol levels, promotes stable blood sugar, helps keep you full between meals, and nourishes the beneficial bacteria in your gut. A healthy gut microbiome plays an important role in mood, metabolic health, hormone balance, immune function, and overall well-being.


An Easy Way to Eat the Rainbow


Another reason I love dense bean salads is that they're an easy way to "eat the rainbow." By combining colorful vegetables like tomatoes, bell peppers, corn, onions, and herbs, you provide your body with a wide variety of vitamins, minerals, and beneficial plant compounds, including antioxidants and polyphenols, that support overall health at the cellular level.

Ingredients


  • 1 (15 oz) can black beans, drained and rinsed

  • 1 (15 oz) can cannellini beans, drained and rinsed

  • 1 (15 oz) can sweet corn, drained and rinsed

  • 1 medium orange bell pepper, diced

  • ½ pint cherry tomatoes, halved

  • ½ medium red onion, finely diced

  • 1 medium avocado, diced

  • 1 bunch cilantro, chopped

  • 1 jalapeño, finely diced


  • Juice of 2 limes

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp cumin

  • Salt and pepper, to taste


  • ½ cup cotija cheese, crumbled


Instructions


Now that you have your ingredients ready, let’s start making the Mexican Dense Bean Salad:


  1. Prepare: Drain and rinse the canned ingredients along with dicing, chopping, crumbling, mincing, and juicing everything for easy assembly!


  2. Combine: In a large bowl, combine the black beans, cannellini beans, corn, bell pepper, tomatoes, red onion, avocado, cilantro, and jalapeño.


  3. Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, garlic, cumin, salt, and pepper.


  4. Final Steps: Pour the dressing over the salad and toss gently to combine. Then, softly fold in the cotija cheese.


  5. Serve: Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

    • 4–6 oz grilled chicken or steak

    • 4-6 oz pan seared salmon or shrimp

    • 3 hard-boiled eggs

    • 4–6 oz baked tofu or tempeh


  • Tuck into Tacos: Use as a flavorful taco filling with grilled chicken, fish, shrimp, steak, or tofu. Add shredded cabbage for extra crunch and volume.


  • Spoon over Greens: Serve over a bed of romaine, spinach, arugula, or mixed greens. Top with your favorite protein for a satisfying lunch or dinner salad. Drizzle with extra lime juice and olive oil for additional flavor.


  • Enjoy as a Snack with Tortilla Chips: Great for parties, meal-prep snacks, or a balanced afternoon pick-me-up! Pair with a Greek yogurt-based dip or a tuna or chicken salad to round out the protein.
