Mediterranean Glow Bean Salad

Mediterranean Bean Salad Recipe
Ingredients
1 can (approximately 15 ounces) Great Northern Beans, drained and rinsed
5.3 ounces sheep and goat milk feta cheese, crumbled
14 cherry tomatoes, halved
1 medium orange bell pepper, diced
½ large red onion, finely diced
20 sprigs fresh parsley, chopped
14 pieces sun-dried tomatoes, chopped
4 teaspoons extra virgin olive oil
3 teaspoons balsamic vinegar
Salt and freshly ground black pepper, to taste

Instructions
Drain and rinse the beans thoroughly and add them to a large mixing bowl.
Add the tomatoes, bell pepper, red onion, parsley, and sun-dried tomatoes.
Crumble the feta cheese over the mixture.
In a small bowl, whisk together the olive oil and balsamic vinegar.
Pour the dressing over the salad and gently toss until evenly combined.
Season with salt and pepper to taste.
Allow the salad to chill for at least 30 minutes before serving to enhance the flavor.
